🏠 Ingen no Gomae – Super Easy Japanese Green Bean Salad Recipe

Ingen means green beans, and Goma-ae means mixed with sesame. This is a simple recipe that makes a great side dish.

Ingredients

  • Green beans – 2 handfuls
  • Sesame seeds – 1 table spoon (15ml) lightly ground
  • Soy sauce – 1 table spoon (15ml)
  • Sugar – 1 table spoon (15ml)
  • Salt for blanching – 2 tea spoons (10ml) per 1 litre.

How to make Japanese spinach salad

  1. Chop the heads and tails off the green beans, and cut into halves.
  2. Blanch beans in boiling water (with salt ratio above) for 3 minutes. They should be al-dente, with some crispiness to the bite.
  3. Cool in water, drain, and dry on paper towels.
  4. Mix sesame seeds, soy sauce, and sugar.
  5. Mix in beans immediately before serving.

Mixing in the green beans just before eating is to avoid the saltiness of the dressing drawing the moisture out of the beans that make the salad watery.
