🏠Chawanmushi – Super Easy Japanese Egg Custard Recipe

Chawan means teacup or rice bowl, Mushi means steamed.

This simple egg custard recipe is savory as is; you can add your favourite ‘gu’ (like shiitake mushrooms or prawns) to make it your own.

Ingredients (for 2)

This recipe is for a plain Chawanmushi.

  • Egg – 1
  • Shiro Dashi – 1.75 tablespoons (about 25ml)
  • Water – 150ml

How to make savory egg custard

  1. Beat the egg and mix all ingredients together.
  2. Pour mixture into two ceramic cups, through a metal strainer.
  3. Once the steamer is boiling, steam on high for 2mins, then on low for 10mins.
    (Placing aluminimum foil on top can prevent water droplets entering the cup)
