🏠 Kinpira Ninjin – Super Easy Japanese Braised Carrot Recipe

Often made with burdock (kimpira gobo), this easy and tasty side dish can also be made with just carrots. Great for when burdock is hard to get, or to use up leftover carrots.

Ingredients

  • Carrots, 1.5~2 (peeled)
  • Soy sauce, 1 tablespoon (15ml)
  • Mirin, 1 tablespoon
  • Sesame seeds, 2 tea spoons (optionally lightly ground)
  • Sesame oil, to stir fry

How to make Kinpira Carrots

  1. Cut carrots into 4cm long strips (or use Magimix 4mm grater).
  2. Heat sesame oil in a pan and stir fry the carrots until they start to become floppy.
  3. Add soy sauce and mirin. Simmer until the liquid is gone.
  4. Mix sesame seeds and serve hot or cold – as a side dish with rice.

Bonus: Mugen Ninjin (Infinity Carrots)

Mugen Ninjin is an even simpler version of the Kinpira Ninjin.

The ingredients are:

  • Carrots
  • Sesame oil

Yep. That’s it. Simply stir fry thin short strips of carrots in sesame oil. It’s as tasty as it is simple.
