🏠 Omuretsu – Easy Tasty Japanese Omelette Recipe

A lot of mangas mention Omu-raisu (rice wrapped in egg), but my preference is Omu-retsu (meat wrapped in egg). 😋

The filling here is cooked in gyu-don like broth, so honestly it could be eaten alone with a bowl of rice. But let’s add the “Omu” (egg) part anyway!

Ingredients (for two)

Filling:

  • Bolognese mince (pork & beef) – 250g
  • Onion – 1 (sliced to 1-2mm)
  • Sake – 1 table spoon (15ml)
  • Sugar – 1 table spoon
  • Soy sauce – 1 table spoon
  • Salt & Pepper – a few shakes

The “omu” egg mix:

  • Eggs – 4 ~ 6 (how hungry are you?)
  • Milk – 2 table spoons

How to make Japanese omelette with mince filling

  1. Brown the mince.
  2. Add onion and brown ’til soft.
  3. Mix in all the filling sauce ingredients. Simmer until the liquid has reduced.
    Optionally keep it resting for a while to let the flavour seep in.
  4. In a fresh pan, pour in the egg mix for one. Stir and let it almost set in a circular shape.
  5. Add in half the filling, and wrap the egg around it.
  6. Serve with tomato sauce & tonkatsu sauce

A popular alternative to wrapping the egg around the filling, is to serve the egg on top of the filling. No more broken omu-retsu 😝
